Kim Pekalski's Recipe for:

Kentucky Butter Cake

Cake:
3 cups flour
1 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
2 cups sugar
1 cup butter, softened
4 large eggs
1 cup buttermilk
2 tbsp. vanilla

Sauce:
1 cup sugar
1/2 cup butter
1/4 cup water
1 tbsp. vanilla


Heat oven to 325. Sift together flour, baking powder, salt and baking soda. Set aside.
Beat sugar and butter in bowl. Add eggs, one at a time, beating well after each.
Combine buttermilk and vanilla.
Add buttermilk and flour mixtures alternately in thirds, ending with flour mixture.
Spoon batter into greased tube pan. Bake for 1 1/4 hours. Remove cake from oven but leave in cake pan.
To make the sauce, heat ingredients in saucepan over medium heat until butter melts and sugar dissolves. Do not boil. (about 10 minutes).
Prick top of cake with a fork. Pour sauce over cake.
Let cake cool completely before removing from pan. (I recommend at least 2 hours).
Sprinkle with confectioners sugar before serving.

1st Playoff Game/Awards and cook-out

Hi Guys- Coach Murray has asked me to get the word out, The first (of hopefully many) playoff games will be Wednesday - May 20th (aka tomorrow) 6pm at Hendricken vs. Barrington. Immediately following the game - we will fire up the grills and cook up the leftover hamburg and hot dogs from last Saturday ( under the tent). I believe we have enough food & drinks. If anyone feels ambitious and would like to bring a dessert item- please feel free. Coach will also give out some end of year awards and we will give the coaches their gift certificates to show our appreciation.Thanks for all your help- GO HAWKS Ted

Varsity Parents - Support Your Team !

It has been a tradition of varsity lacrosse parents to bring in snacks and/or beverages for the players after their home games. Tables for the snacks are set up in the lobby of the gym or outside the gym doors depending on the weather. In the past, the players have enjoyed pizza, hot dogs, meatball sandwiches, macaroni & cheese, grinders, donuts, brownies, cookies, sports drinks, soda, etc. Your participation is encouraged but not mandatory-no stress!

PRACTICES
Practices start at 3:45 and will generally end by 6:15.

AWAY GAME TRANSPORTATION POLICY
All players are expected to ride the bus to all away games. A player will be allowed to leave a game with a parent. If a player were allowed to drive to a game on his own, it would have to be approved by the coaches and the Athletic Director. The player needs to provide a written request 48 hours in advance. The request needs to be signed by a parent/guardian. NO EXCEPTIONS.
